A Cozy Meatless Monday

It's that time again! We are beginning to enter the chilly months of Fall, right before winter. Where the days end sooner, and the weather gets colder. It's the season for warm sweaters, comfy boots and scarves. All of which I love, because Fall is by far, my favorite season. There's Halloween, my favorite holiday,  my birthday, Thanksgiving and beginning of the Holiday season. And my favorite part of this time of year is, course, cozying up with some warm and comforting fall recipes. That's why I thought this Meatless Monday I would post some delicious, comforting and meatless fall recipes that will make even the biggest skeptic of Fall warm and cozy.

The recipes are divided into three categories; pumpkin and apple recipes because they are some of the most popular fall flavors of the season (I'm a bit of a pumpkin addict). And the last categories is comprised of soups, because when the weather gets chilly, there is nothing more inexpensive, easy and comforting than coming home to a big pot of soup on the stove for dinner. 

All recipes are labeled with our nutrition icons to indicate if the recipe is Vegetarian, or Vegan.

Gingered Sweet Potato and Carrot Soup

1. Gingered Sweet Potato and Carrot Soup:
Creamy and totally satisfying! A great filling dinner!

 2. Mushroom Soup:
Super easy to make; just add mushrooms, veggies and veggie stock, and simmer!

3. Tuscan Kale Veggie Soup:
Filled with healthy vegetables and kale! Satisfying and healthy! 

4. Meatless (Triple Bean) Chili:
Who says chili has to have meat? This three bean chili, is packed with protein and super filling and delicious!

5.  Apple and Butternut Squash Soup:
All of the best fall flavors combined in one delicious soup!

Gooey Pumpkin Mac and Cheese
 Pumpkin Recipes:

1. Pumpkin Waffles
What a better way to start the day, then with pumpkin waffles! 

2. Pumpkin Mac and Cheese 
Mac and Cheese is delicious on its own, but add pumpkin and it's absolutely irresistible! 

3. Pumpkin Enchiladas:
Pumpkin done, South of the border style! (The recipe calls for chicken, but just omit it to be meatless!)

4. Pumpkin Hummus
 This isn't exactly a warm or cozy dish, but pumpkin is awesome and so is hummus, so why not combine them?

5. Pumpkin Quiche
Pumpkin Quiche is super easy to make and a great way to use up leftovers!
