Try Tofu!



Ever wonder what those small white squares are on the salad bar? A Meatless Monday favorite, Tofu, can be found on the salad bar every day of the week! 




Tofu was discovered over 2000 years ago by the Chinese. It is known as the “cheese of Asia” because the look and consistency of it makes it resemble cubed cheese. It has become a staple in Asian culture and is making it's debut here in America!


Tofu is purely plant based, made from soybeans, water, and a curdling agent. Doesn’t look or sound too appealing does it? Well the great thing about tofu, is even though it is a bit bland straight from the container, it is extremely versatile has the ability to absorb the flavor of anything that it is mixed with! This, along with its high nutritious value makes it worth trying!


Let’s see how Tofu compares to Beef:

Calories- One half-cup serving of tofu contains only 94 calories. By comparison, 4 oz of ground beef contains a whopping 331 calories!

Protein- For each 100 calorie serving, tofu contains 11 grams of protein, whereas, 100 calories of ground beef provides 8.9 grams of protein.

Cholesterol-4 oz of ground beef contains about 113 mg cholesterol. How does this compare to Tofu? It just doesn’t. Tofu is a cholesterol-free food. Can’t get much better than that!

Fat- One half-cup serving of tofu contains 5 grams of fat. 4 oz of ground beef contains 15 grams of fat!

Carbon Footprint- The footprint of 1 pound of beef equals 14.8 pounds of CO2 equivalent. However, 1 pound of tofu is a mere 0.814 pounds of CO2 equivalent! It was ranked one of the 7 Low-Cost, Low-Emission Foods!

Tofu can be prepared with pretty much anything! That’s the glory of it. It’s seemingly bland flavor can take on the flavor of whatever it’s mixed with, anything from chili to chocolate chips! Add it to a salad, soup, sandwich, or mix it with any other dish that the dining hall is serving that day. No more excuses about missing out on protein found in meat, this is a much better alternative! Tofu will supply your body with plenty of protein as well as many other nutrients that will make your body happy!
